Another idea I am trying out to accompany my tea-infused spotted dick idea is tea flavoured fudge. In tonight’s experiment I used 4 dessert spoons of milk, 2 dessert spoons of granulated sugar and a scant teaspoon of tea leaves.
The jury is still out on that one. It has the flavour but I am not sure about the appearance. I could either be described as like a Christmas pudding or like something you wouldn’t want to step in. Perhaps it would be better to brew the tea first rather than leaving the leaves in but I rather like the texture.
The deciding factor will be how it sets up; if it remains soft (twice as much milk as sugar and not boiled for too long), it might be just what I am after to set the spotted dick slices off (sweet, tea flavoured and easier to manage than blobs of custard).
