I love the opportunity to have hot buttered crumpets. It isn’t something I have every day but I particularly enjoy them as a breakfast treat once in a while. However Jane came up with an interesting variation today and served them up as part of dinner.
No butter but she topped them with a combination of tomatoes and carrots and served them up with a side dish of chopped cucumber. What is more, all of those items (although not the crumpets or some of the other flavourings like the capers and sultanas) came fresh from the garden. A win all round.
