Dark Tatin

I would say that the sugar in last night’s tarte tatin was a bit on the well-cooked side:

Making the caramel probably demands full attention rather than also trying to prepare the fruit! At least it wasn’t overly sweet, with the sugar balanced by the slight bitterness of dark toffee.

It certainly wasn’t inedible but I think I should have another attempt fairly soon.
