A lot of my weekend has been spent cooking up various preserves to make the most of our ongoing plum harvest. Plum jam, plum jam with rum and plum chutney have been the main three so far.
One thing I have noted is that it seems to take a lot longer to reach the setting point than the instructions seem to suggest. Perhaps I’m not using enough heat or my fruit has a higher moisture content than that used for testing.
There are more plums on the tree (and other fruit in the garden), so more chance to pin things down through experimentation!
