Afelia Redux

Today I had another go at the afelia dish I discovered in August (pork marinated in wine with coriander). This time, I didn’t stop to consult any recipes but just cooked – looking back, I see I followed several of the things I had in mind last time, like a longer marinade, adding bay leaves and cooking more slowly (for which the slow cooker was well suited).

Not yet perfected but certainly improved. Next time, I think I could do with giving it longer still in the slow cooker but I don’t think this is far off being a reliable staple.
