I seem to be having a run on food posts. Apologies to those dieting this month but food is an important part of my daily life! Today I wanted to note the lovely cake Jane made yesterday – mincemeat upside down cake.
I didn’t cook as many mince pies as I thought I might over Christmas so we had several jars of mincemeat left in the fridge. The recipe for this approach to sopping them up is very simple – spread mincemeat in the bottom of a lined cake tin, add a mixed up standard sponge cake and bake as for a regular sponge. Once out of the oven, it can cool for a bit and then be inverted over a plate.
If you like mincemeat and you like sponge cake, this one is a winner!
