My first batch of dehydrating finished today – a selection of tomatoes that I’d started yesterday, sprinkled with a little dried thyme and sea salt. Wow! They look like jewels and taste so sweet! It’s tempting to munch all the way through them but that’s probably not a good idea. Partly, they concentrate the tomato so it would be like eating rather a lot of the fresh fruit; partly, this is meant to be a way to preserve the harvest so it keeps longer!
Still, I’m happy with the results and my apple slices also seem to be going well.
